Bruschetta Mix
1 can (14.5 oz) petite diced tomatoes – drained
(you can use chopped fresh tomatoes)
1 can (8 oz) medium black olives – drained & sliced
3/4 to 1 cup chopped onions
1/4 cup olive oil
3/4 tsp basil
1/2 tsp garlic salt
1/4 tsp salt
1/4 tsp black pepper
optional ingredients:
chopped mushrooms
chopped bell peppers
Mix all these ingredients together and put them in an airtight bowl and refrigerate for up to 3 days.
Baked Bruschetta Toasties
Preheat oven to 350°
For this you need your choice of sliced bread. (We like herb bread)
Place slices of bread on a cookie sheet
Put Bruschetta mix on slices of bread and cover with shredded cheese.
Bake for 8 to 10 minutes until cheese is melted.
allow to cool
enjoy
*I think the Bruschetta mix & cheese would
be yummy baked on a pizza crust.
I plan to try it sometime.
Between my sister and me trying different variations,
we’ve finally a tasty Bruschetta mix that we both like.

Oh yes you could easily change this to whatever would suit you, even nice for snacks wen friends pop over you could cut them into fingers.

I’m so glad you posted this recipe. Bruschetta is one of my favorites! I usually buy a premixed jar of the tomato topping, but it is a really tiny jar and very expensive. I’ll try this for sure.
I have never had bruschetta! In the movie Julie and Julia my mouth is always watering when Julie and her hubby inhale bruschetta she made. My tastebuds are working now E.C.! Your bruschetta looks wonderful. CH will love these. OhMyGosh! Wait till Margie sees you have posted BRUSCHETTA! I can hardly wait.
