cpck3-2-5-2013The other day as I was looking though my cabinet, I saw a box of Devil’s Food cake mix that was close to expiring. I didn’t want to throw it out, but I didn’t want to make a cake either. Box cakes are too big for us and go to waste. So, I decided on cupcakes. The mix makes 24 and I can freeze them, they’ll keep until we take a hankering for one or until our grandson comes over and wants a snack. ;)
cpck1-2-5-2013I kept a few out for us to munch on for a couple days. I didn’t have a cake plate or anything, so I improvised. I put the cupcakes on a pretty clear plate and then covered them with one of my glass mixing bowls. cpck2-2-5-2013
cpck4-2-5-2013To freeze cupcakes, I let them cool completely, then wrap them in plastic wrap. Put them in a box & freeze them.
I guess I should mention that it’s a good idea not to frost the cupcakes before freezing them.

To thaw them out, I unwrap the plastic wrap from them, sit them on a plate on the counter and let them thaw out. When they’re thawed I can put frosting on them and/or decorate them. I usually don’t frost them unless our grandson is visiting.
Unwrapping the plastic wrap is the key to keeping cupcakes from being gooey when they thaw out.
