Fried Squash, Potatoes & Onions

 squash, potatoes & onion
cornmeal & seasonings

Chop up potatoes, squash & onions
Put in a bowl

Add cornmeal & seasoning
Put a lid on the bowl
Shake til all of it is coated

Fry in a preheated hot pan with the
bottom coated generously with olive oil.Put a lid on the pan
lower high to med-high
Stir often until done

6-16-2011- Evening before last, I asked my husband if we should grill, fry, bake or microwave our newly harvested squash. It was a short discussion and ended when my husband told me (and I quote) “The first squash of the season has to be fried.” lol

I tried to post this yesterday, but we had storms all day and trying to do anything on the internet was impossible. But we have a break in the storms for awhile so I thought I’d stay up and play a bit of catch-up with my visiting and commenting and get this posted too.
